Chinese Chicken Salad

Cucumber Namul

  • 3 cucumbers
  • 2 tablespoons sugar
  • 2 tablespoons vinegar
  • 1 tablespoon soy sauce
  • 1 clove garlic, smashed and minced
  • 1 teaspoon sesame seeds
  • 1 teaspoon sesame oil
  • 1 teaspoon chili paste

Instructions: Wash and dry cucumbers, and slice thinly, place in a bowl, and sprinkle 1 teaspoon of salt. Gently mix the salt into the cucumbers and set aside for 30 minutes. In a small jar or bowl, mix the sugar, vinegar, soy sauce, garlic, sesame seeds, sesame oil and chili paste, and mix well until all the sugar is dissolved. Once the cucumbers have released their liquid, rinse and squeeze out the excess water. Use a tea towel or cheesecloth to get out as much water as possible. Place the drained cucumbers in serving bowl and pour sauce over and serve.
